I created this taco stew recipe on a whim one day, wanting to use up extra potatoes and satisfy a taco craving. It turned out amazing! Everyone loved it! It made more than I expected, but leftovers are always a bonus. I began cooking it in my smaller crockpot then quickly realized it wouldn’t fit, so i transferred it to my 8qt crockpot.
I absolutely love using my crockpot, particularly on those hectic and busy workdays when I am fully aware that I won’t have any extra time or energy to cook once I finally get home. In my honest opinion, it is truly an indispensable and essential kitchen appliance that I rely on regularly.
