Crockpot Taco Stew on a whim!

I threw this recipe together one day on a whim, trying to use up some excess potatoes and craving tacos. It turned out fantastic! Everyone else loved it as well! It definitely made more than i expected, but leftovers are not a bad thing! I started it in my smaller crockpot then quickly realized it would not fit, so i transferred it to my 8qt crockpot.

I love using my crockpot, especially on busy work days when i know i wont have time to cook when i get home. It is such an essential little appliance in my opinion.
