Monday we knew we had a busy work day the next day, so we planned ahead and got this meal all prepped and ready to just throw in the oven when we got home!

This is one of our all time favorite comfort foods. The recipe originated from my mom, who passed away years ago, although she didn't particularly like the tomatoes in it, we absolutely love it!

We personally love to serve this dish with a side of breakfast sausages. We will typically drizzle some maple syrup over the sausages. My oldest son loves to add maple syrup to his mac and cheese as well!
