We’ve owned our smoker for about four years but had never tried smoking chicken thighs, until tonight. We gave it a shot, and the results were absolutely delicious!
I create my own homemade “shake ‘n bake” blend so I can customize the spices to my liking. They turned out excellent, with the smoky flavor penetrating all the way to the bone.

The tray shown in this photo was purchased here. We have been using these trays on our smoker since day one, and they are absolutely fantastic!
We were feeling a bit lazy, so we decided to keep the sides simple with boxed options. We made turkey stovetop stuffing and white cheddar Shells Pasta-Roni. They paired perfectly, making it a great choice.
